So I see you all picked up on the joke that Suzette played on me. The truth is obvious, I really have no clue when it comes to making enchilada’s. Not even enough to realize there was no cheese listed in the ingredients and no instruction for the vegetable oil (write your own joke here). So now I feel I should make up for it, here’s my favorite family recipe and also great for the holiday’s!
Ron’s Red Hot Jello:
Ingredients:
1 Large Rasberry Jello
3 1/2 cups Boiling Water
1/2 cup Red Hot Candy (Cinnamon Imperials)
2 cups Crushed Pineapple - Drained
2 cups Apple Sauce
Directions:
Disolve Jello and candy in hot water. Add apple sauce and pineapple. Refrigerate till set. I have actually made this before, a must have at our house during the holidays! Enjoy!
Ron’s Turkey Enchiladas - Great for the Holiday’s!
Ingredients:
3 cups shredded, skinned, cooked turkey
2 cups Light Sour Cream
1 cup Vegetable Oil
12 Corn Tortillas
1 16oz of Salsa
Preparations:
1) In a bowl mix turkey, sour cream and cheese
2) Fill tortilla equally with turkey mixture. Roll up and arrange side by side in a baking dish.
3) Pour salsa over top evenly. Sprinkle cheese on top.
4) Bake at 350 for 20 minutes. ENJOY!
